Spaghetti Bolognaise, Carbonara, LasagnaΒ β there really is no better comfort food than a large stodgy portion of pasta on a cold night. Shame its not exactly healthy.
However new research carried out for BBC TV seriesΒ ‘Trust Me I’m A Doctor’Β uncovered a loophole for pasta-lovers.
In the novel study, a group of volunteers ate freshly cooked pasta, then theΒ same dish cooled downΒ and then reheated. To scientist Dr Chris van Tullekenβs amazement, cooling the pasta changed its structure. That leftover Bolognaise in your fridge becomes resistant starch, which means your body treats it more like fibre. It also, unlike fresh pasta, boosts healthy gut bacteria.
But reheat it and things get even better – not only did it reduce the rise in volunteers blood glucose by 50%, it also contained fewer calories.
If only this worked for all carbohydratesβ¦
